At some point in the future, hopefully, they'll have the security to be able to worry about the "quality of life" of their mongers (ie. reasonable pay, and gasp! health care). And at some point after that, cheese-mongering will become a career instead of the way station it is now. Until that moment arrives (if?), the mongers that help you will know far less than the mongers that quit the month before to start a better paying career.
